If the task list is simple to start, I think a wiki page is sufficient.
This is what we used back in the day for Fedora Engineering, for example:

But then, as our team grew and the workload went up, we graduated to using
Trac, which has more administrative overhead but is a much cleaner tool,
for example:
https://fedorahosted.org/fesco/report/6
Seems like we've got wiki functionality now, and probably only a handful
of issues so far, so I'm guessing the wiki is good enough for now.
